Tasting notes
Emmanuel Rouget's Bourgogne Aligoté is quite a special treat among the whites of Burgundy. While Rouget is renowned for his Pinot Noir, this white certainly deserves attention too. The 2007 vintage has matured beautifully and is at its peak now. The cool climate of Burgundy imparts a delicate acidity and a mineral touch to this wine.
In volume 33 of 'Drops of God', when Emmanuel Rouget himself offered this wine, everyone around was captivated by its taste. It's simple, yet the depth of flavor resonated with the heart. It seemed to have the power to change even the atmosphere around it.
As you pour it into the glass, its clear, pale lemon-yellow hue catches your eye. This shade hints at its maturity. The aroma is open, with notes of lemon, apple, and a hint of white flowers. When you taste it, a refreshing acidity greets you, followed by an apple-like fruitiness that gently follows. The bitterness is subtle, and there's a strong presence of minerals, giving it an overall crisp impression.
The finish lingers quietly, with a subtle sweetness that remains. It's best enjoyed slightly chilled, not too cold. Just pouring this into a glass lets you feel a breeze of Burgundy.
