Tasting notes
Billecart-Salmon, a storied Champagne house dating back to 1818, crafted this special Cuvée Elisabeth Salmon Brut Rosé to honor its namesake. It's a luxurious blend of Chardonnay, Pinot Noir, and Pinot Meunier, and when you take a sip, you can feel both elegance and strength in one package.
This wine appears in Volume 27 of 'Drops of God' as a candidate for the Eighth Apostle, brought by Shizuku's rival, Issei. He highly praises it, saying it's like a woman who embodies both strength and kindness. Imagine a perfectly balanced tree, swaying gently in the wind, embracing you. Using Issei's words, this champagne is like the "Madonna from behind."
Pour it into a glass, and you'll see a pale pink hue with a hint of orange, accompanied by fine, delicate bubbles. On the nose, it first offers notes of red fruits like strawberries and raspberries, followed by a subtle aroma of sous bois. On the palate, the vibrant acidity envelops your mouth while the fresh fruitiness unfurls elegantly. The finish lingers long, leaving that opulence intact.
Overall, this champagne has gained complexity and depth with age, resembling a piece of matured art. Serve it best at 8-10°C in a slightly larger glass to enhance its bouquet.
