Le Macchiole's Paleo Rosso is a red wine from Tuscany, primarily made from Cabernet Sauvignon. It's a vintage from 2000, so it's got that beautiful maturity going on. Tuscany might be known for its Vermentino and Cabernet Franc, but this wine really lets the Cabernet Sauvignon shine. It's aged well over the years, and it's one of those bottles you just have to open and experience for yourself.
This wine makes an appearance in the second volume of "Drops of God." There's a memorable scene where Honma discusses it in his room, adding to the mystique of the wine. It makes you curious about what was said, right? It's a special wine, and I think it's worth getting to know it personally.
Pour a glass and you'll notice that deep ruby color with a hint of garnet on the rim, showing its age. On the nose, you'll pick up ripe black cherry and cassis, with tobacco and forest floor notes weaving through. Right from the first sniff, it's got this complex and inviting aroma that really draws you in.
When you taste it, there's this rich fruitiness upfront, then those robust tannins kick in to give structure. The acidity is lively, keeping everything balanced. The finish is long, leaving you with a sense of calm like walking through a deep forest. I'd say it's best enjoyed slightly chilled, taking your time to savor it.
