Tasting notes
Domaine René Bouvier's Gevrey-Chambertin Racines du Temps is a really special bottle. It's made from 100% Pinot Noir, capturing the essence of Burgundy in a way that speaks volumes. The 2003 vintage was particularly hot, giving the wine a strong fruit character that's just remarkable.
Remember that scene in Volume 16 of 'Drops of God' where Shizuku pairs this wine with tuna at a sushi bar? You might think red wine with sushi is odd, but the unique acidity of this Gevrey-Chambertin plays beautifully with the soy sauce and rice, bringing out the umami of the tuna. It was quite the revelation.
Take a look at this color. It's got a brick-red rim that hints at its age and depth. When you give it a sniff, there’s this rich aroma of black cherry and plum. There's also a spicy edge to it, with cinnamon and clove making an appearance. On the palate, the tannins are silky, and the acidity is lively, making for a well-balanced and approachable sip.
The finish lingers on, with the fruit sweetness and acidity leaving a complex sensation in your mouth. This wine lets you savor the elegance of Pinot Noir and the character of Burgundy, so try it in a nice glass and take your time with it.
